بررسی و مقایسه پروفیل اسیدهای چرب و املاح کلسیم، فسفر و آهن در ماهی تیلاپیا (Oreochromis niloticus)، شیربت (Arabibarbus grypus) و قزل‌آلای رنگین‌کمان (Oncorhynchus mykiss)

چکیده

تحقیق حاضر با هدف بررسی و مقایسه پروفیل اسید چرب و املاح کلسیم، فسفر و آهن در ماهی تیلاپیا (Oreochromis niloticus)، شیربت (Arabibarbus grypus) و قزل‌آلای رنگین‌کمان (Oncorhynchus mykiss) انجام شد. بدین‌منظور تعداد 3 قطعه از هر گونه ماهی (در مجموع 9 قطعه ماهی) مورد آزمایش و آنالیز قرار گرفت. نتایج بدست آمده نشان داد که بالاترین مقدار عناصر آهن و کلسیم به ترتیب با میزان 73/3 و 19/26 میلی‌گرم در کیلوگرم وزن تر متعلق به ماهی شیربت و قزل‌آلا بود. از سوی دیگر در ماهی قزل‌آلا بیشترین مقدار فسفر با میزان 94/2 گرم در کیلوگرم بدست آمد. افزایش درصد خاکستر می‌تواند سبب کاهش کیفیت گوشت در آبزیان شود از این رو نتایج بدست آمده از درصد خاکستر نشان داد که کمترین مقدار خاکستر با 04/1 درصد متعلق به ماهی شیربت و بیشترین مقدار متعلق به تیلاپیا و قزل‌آلا با 13/1 درصد بود. بیشترین مقدار ماده خشک به میزان 26/28 درصد در ماهی شیربت بدست آمد. همچنین ماهی شیربت با 97/70 درصد بیشترین مقدار اسید چرب غیر اشباع را نیز دارا بود. ماهیان قزل‌آلا و تیلاپیا به ترتیب حاوی 71/65 و 14/57 درصد اسید چرب غیراشباع بودند. بنابراین می‌توان اعلام کرد ماهی شیربت با دارا بودن بیشترین مقدار اسید چرب غیر اشباع از نظر کیفیت و کالری مورد نیاز بدن انسان، در مقایسه با دو ماهی دیگر ارجحیت دارد، همچنین ماهی تیلاپیا با دارا بودن بیشترین مقدار پالمتیک اسید در بین سه گونه ماهی مورد آزمایش بطور واضحی نمایان ساخت که کیفیت خوراکی این ماهی در قیاس با دو ماهی دیگر از سطح بسیار پایینی برخوردار است.

چکیده [English]

The aim of this study was to compare the fatty acid profile and calcium, phosphorus and iron in Oreochromis niloticus, Arabibarbus grypus and Oncorhynchus mykiss. For this purpose, 3 fish (9 fish in total) were analyzed. The results showed that the highest amounts of iron and calcium were obtained in A. grypus and O. mykiss with 3.73 and 26.19 mg/kg, respectively. O. mykiss, on the other hand, had the highest phosphorus content of 2.94 g/kg. Increasing the amount of ash can decrease the quality of meat in aquatic life, so the results showed that the lowest amount of ash belonged to A. grypus with 1.04% and O. niloticus and O. mykiss with 1.13%. The highest dry matter content was 28.26% in A. grypus. Also, A. grypus had the highest amount of unsaturated fatty acid (70.97%). O. mykiss and O. niloticus had 65.71% and 57.14% unsaturated fatty acids, respectively. Therefore, it can be stated that A. grypus has the highest amount of unsaturated fatty acids in terms of quality and calories needed by the human body compared to the other two fish. O. niloticus, with the highest palmitic acid content among the three species tested, clearly showed that the quality of this fish was very low compared to the other two fishes.
